Mmmmm! they're good and worth the effort.

Ingredients

  • 2 eggs, separated
  • 2 Tbs. vegetable oil
  • 1 1/2 tsp. sugar
  • 1 C. flour
  • 1/2 tsp. baking powdwr
  • 1 C. milk
  • 1/4 tsp. salt

Directions

Beat egg yolks until light in color and stir in sugar.

Stir together remaining dry ingredients; add to egg mixture, alternately with milk. Mix in oil. In separate bowl beat egg whites untill stiff; fold into batter. Bake as directed below.

This can only be baked in an Ebelskiver pan.

1. Heat pan over medium heat until hot.

2. Place 1/4 to 1/2 tsp. burter in each cup. Add 1 Tbs. batter in each. Bake until edges appear brown and center is bubbly.

3. While bubbly, turn each Ebelskiver with a fork. Bake until wooden pick inserted in center comes out clean.

4. Repeat with remaining batter adding butter to each cup and reheating pan for 1 minute between batches.

May be filled while baking with apple slices, cheese, or a tsp. jam. Sprinkle with powdered sugar and serve
