Ingredients

  • 1/3 cup very finely chopped peeled, seeded cucumber
  • 2/3 cup plain yogurt
  • 1/4 cup finely chopped onion
  • 2 tsp. dried dillweed
  • 2 tsp. lemon juice
  • 1 tsp. chopped fresh parsley

Directions

Mix and serve chilled over salads, with lamb recipes, pita bread sandwiches or with pork and chicken recipes. Can serve as a dip for spicy cooked cold prawns or with kabobs. Good as a sauce for a cold salmon rice salad served on cooked bell pepper halves. Recipe can be varied by adding 1 tbsp. chopped bell peppers or scallions.
