Ingredients

  • 1 1/2 c packed brown sugar
  • 1/2 c shortening
  • 1 egg
  • 2 cups flour
  • 1 t baking soda
  • 1/2 t salt
  • 1 c sour cream
  • 1 1/2 c rhubarb, cut up in 1/2-in. pieces
  • Topping:
  • 1/2 c sugar
  • 1 T melted butter
  • 1/2 c chopped nuts
  • 1 t cinnamon

Directions

Cream sugar, shortening and egg thoroughly. Stir together flour, soda, salt and add to creamed mixture. Alternate stirring rhubarb and sour cream in mixture. Turn into greased and floured 13x9x2-in. baking pan. Sprinkle on topping and bake in 350 degrees F. oven for 45 to 50 minutes.

Topping:

Mix together and serve on sour Cream Rhubarb Squares.
