Ingredients

  • 1/4 lb. ground pork
  • 1/2 lb. shrimp
  • 2 tbsp fermented black beans
  • 1 egg, beaten
  • 2 tbsp oyster sauce
  • 1 tsp fresh chopped ginger
  • 1 clove garlic, minced
  • 1 tbsp cornstarch, dissolved in a little water
  • 1 c. chicken broth
  • Few drops sesame oil
  • 2 scallions, chopped

Directions

Brown pork in WOK, till it separates into small pieces. Add the black beans (these should soak in water about 10 min and then mash); the garlic and ginger. Stir fry about 1 minute. Add the shrimp and cook till pink. Add oyster sauce, mix well. Then, add chicken broth. Bring to a boil and add the cornstarch mixture to thicken. Drizzle beaten egg into sauce and mix quickly. Garnish with scallions and a few drops of sesame oil. (I've alway thought it a funny name, since it has no lobster in the dish.)
