Ingredients

  • 1/4 c. paprika
  • 2 tsp onion powder
  • 2 tsp dried whole thyme
  • 1/2 tsp ground red pepper
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp dried whole oregano
  • 1/4 tsp ground black pepper

Directions

Combine, mixing well. Rub evenly on all surfaces of 2 slabs pork ribs. Place in covered container and refrigerate 24 hours. Cook in smoker with hickory chunks you have soaked in water for at least 2 hours. Takes about 3 hours in normal smoker. (We don't even use a BBQ sauce on these, they're SO GOOD!)
