Ingredients

  • 4 c. peeled, finely chopped potato
  • 2 1/2 c. flaked, smoked fish (about 3/4 lb)
  • 6 slices bacon, cooked and crumbled
  • 2 tbsp chopped onion
  • 2 tbsp chopped fresh parsley
  • 1/8 tsp pepper
  • 1/3 c. vegetable oil
  • 1/2 c. water
  • Paprika

Directions

Combine first 6 ingredients; set aside. Heat oil in heavy nonstick skillet; stir in potato mixture. Add water; cover, reduce heat and simmer 7 minutes. Uncover and cook 8 to 10 minutes, stirring occasionall, or till browned. Spoon into a serving dish; sprinkle with paprika. Serve immediately.
