Ingredients

  • 2 1/2 oz. egg noodles
  • 2 tbsp butter
  • 1/3 c. chopped onion
  • 3 tbsp flour
  • 1/2 tsp salt
  • 1 tbsp curry powder
  • 1 3/4 c. milk
  • 10 oz. pkg frozen peas
  • 2 c. ham, chopped
  • 4 oz. can sliced mushrooms
  • 1/2 c. crushed butter crackers, mixed with 1 tbsp melted butter

Directions

Cook noodles according to package directions, drain. Meanwhile, saute onion and curry powder in 2 tbsp butter till onion is tender. Stir in flour and salt. Add milk, all at once, cook and stir constantly till thickened and bubbly. Stir in thawed peas; remove from heat. Stir in ham and drained mushrooms. Gently fold in noodles. Turn into 2 quart casserole. Sprinkle with cracker-butter mix. Bake, uncovered, at 350 for 30 to 35 minutes.


Serves 6.
