Ingredients
- 12 oz. can tomato juice (I like V-8)
- 3 med. tomatoes, peeled, seeded & chopped
- 2 tbsp fresh lemon juice
- 1/2 tsp garlic salt
- 1/4 tsp fresh ground pepper
- Hot sauce to taste
- 1 med. cucumber, peeled and finely chopped
- 1 med. green pepper, finely chopped
- 1/2 c. celery, finely chopped
- 1/3 c. minced green onions
- Cucumber slices
Directions
Combine first 6 ingredients in container of electric blender; process till smooth. Combine tomato mixture, chopped cucumber, green pepper, celery and green onions; chill thoroughly. To serve, ladle soup into chilled bowls; garnish with thin cucumber slices.
6 servings. (about 43 calories per serving.)
