Chilled Gazpacho Recipe

  Spanish Soup

Ingredients:
12 oz. can tomato juice (I like V-8)
3 med. tomatoes, peeled, seeded & chopped
2 tbsp fresh lemon juice
1/2 tsp garlic salt
1/4 tsp fresh ground pepper
Hot sauce to taste
1 med. cucumber, peeled and finely chopped
1 med. green pepper, finely chopped
1/2 c. celery, finely chopped
1/3 c. minced green onions
Cucumber slices

Directions:
Combine first 6 ingredients in container of electric blender; process till smooth. Combine tomato mixture, chopped cucumber, green pepper, celery and green onions; chill thoroughly. To serve, ladle soup into chilled bowls; garnish with thin cucumber slices.
6 servings. (about 43 calories per serving.)
