Ingredients

  • 3/4 c. cooked, mashed sweet potatoes
  • 1/2 c. melted butter or margarine
  • 2 tbsp brown sugar
  • 2 c. flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp soda
  • 3/4 c. buttermilk

Directions

Combine potatoes, butter and brown sugar;beat at med. speed of elec. mixer till blended. Combine flour, baking powder and salt; stir well. Stir soda into buttermilk until it is dissolved. Combine all ingredients, stirring just till moistened. Turn onto floured surface and kenead lightly 6 to 8 times. Roll to 1/2 inch thickness; cut with 1 1/2 inch biscuit cutter. Place on ungreased baking sheet; bake at 400 for 18 to 20 min.
