Ingredients

  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 large green bell pepper, sliced
  • 1/2 bunch green onions, chopped
  • 4 oz. snow peas
  • 8 oz. fresh mushrooms
  • 1 lb. scallops
  • 1/4 c. white wine
  • 1/2 c. milk

Directions

Heat oil in large skillet. Saute garlic, green pepper and green onions until tender. Add snow peas and mushrooms. Saute until tender-crisp. Add scallops. Cook 4 minutes, stirring frequently. Add wine, cook for 1 minute, stirring often. Stir in milk, cook until heated through. Serve over hot cooked linguine or rice.
