Ingredients

  • Part 1
  • 1 cup flour
  • 1 cup brown sugar
  • 3/4 cup oatmeal
  • 1/2 cup butter
  • Part 2
  • 4 cups sliced rhubarb
  • Part 3
  • 1 cup sugar
  • 1 cup water
  • 2 tablespoons cornstarch
  • 1 tablespoon vanilla

Directions

Combine ingredients from part 1 and mix until creamy. Spread half on bottom of 9 inch pan. Place rhubarb (part 2) on top of batter. Combine ingredients from part 3 and cook on medium heat until clear. Pour over rhubarb and sprinkle remaining batter on top. Cook in preheated oven at 375F for 1 hour. Serve hot with lots of ice cream.
