Ingredients

  • 2 c. cooked, flaked fish (cod or other firm white fish)
  • 1 c. cold mashed potatoes
  • 1/4 c. minced onion
  • 2 tsp. lemon juice
  • 2 eggs, beaten
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 c. all-purpose flour
  • 1/2 c. vegetable oil
  • Cocktail sauce (optional)

Directions

Combine first 7 ingredients; mix well. Shape into 8 patties; dredge in flour. Fry cakes in hot oil about 10 minutes or till golden brown, turning once; drain well. Serve with cocktail sauce, if desired. 8 servings. (Note: Any canned or leftover fish may be used.
