Ingredients:
2 c. cooked, flaked fish (cod or other firm white fish)1 c. cold mashed potatoes 1/4 c. minced onion 2 tsp. lemon juice 2 eggs, beaten 1/2 tsp. salt 1/2 tsp. pepper 1/2 c. all-purpose flour 1/2 c. vegetable oil Cocktail sauce (optional)
Directions:
Combine first 7 ingredients; mix well. Shape into 8 patties; dredge in flour. Fry cakes in hot oil about 10 minutes or till golden brown, turning once; drain well. Serve with cocktail sauce, if desired. 8 servings. (Note: Any canned or leftover fish may be used. |
