Ingredients

  • 6 1/2 tablespoons sake
  • 6 1/2 tablespoons mirin
  • 10 ounces white miso paste
  • 3/4 cup sugar

Directions

1 Put the sake and miriri in a nonreactive saucepan and bring to a boil for 2 to 3 minutes to evaporate off the alcohol.

2 Over medium heat, add the miso paste to the pan a little at a time, to blend it into a smooth sauce.

3 Turn up the heat and add the sugar in 2 or 3 batches and continue stirring so the mixture does not burn.

4 When the sugar completely dissolves, remove the pan from the heat and leave the mixture to cool to room temperature. This will keep in the refrigerator for up to 3 months.
