Pricking the chilies releases some of the oils but keeps this sake from getting too spicy. You're not looking for a searing drink, just a good kick.
- 2 serrano chili peppers
- 720-milliliter bottle of sake
Using a toothpick, poke holes all over both chilies. In a glass pitcher, combine the ingredients. Refrigerate and allow to infuse for 24 to 48 hours. Strain.
