Ingredients
- 16 oz canned tomatoes, diced
- 1 cucumber, peeled and finely chopped
- 1 green pepper, cleaned and finely chopped
- 1/4 c. onion, finely chopped
- 1 clove garlic, diced
- 2 t. fresh parsley, finely chopped
- salt - to taste
- pepper - to taste
- 1/2 c. Wishbone Italian Dressing
- 16 oz. tomato juice
- Garnish:
- 6 t. sour cream
- croutons
- watercress
Directions
Place all of the ingredients in a large bowl and mix well. Chill until ready to serve. Place gazpacho into individual serving bowls. Top with 1 teaspoon of sour cream. Lay croutons on side of soup. Garnish with a sprig of watercress.
Makes 6 portions.
