Gazpacho Recipe

  Soup

Ingredients:
16 oz canned tomatoes, diced
1 cucumber, peeled and finely chopped
1 green pepper, cleaned and finely chopped
1/4 c. onion, finely chopped
1 clove garlic, diced
2 t. fresh parsley, finely chopped
salt - to taste
pepper - to taste
1/2 c. Wishbone Italian Dressing
16 oz. tomato juice

Garnish:
6 t. sour cream
croutons
watercress

Directions:
Place all of the ingredients in a large bowl and mix well. Chill until ready to serve. Place gazpacho into individual serving bowls. Top with 1 teaspoon of sour cream. Lay croutons on side of soup. Garnish with a sprig of watercress.
Makes 6 portions.
