Ingredients

  • 1 1/2 T sugar
  • 2 T butter
  • 5 T powdered sugar
  • 2 T flour
  • juice from 1 lemon
  • 10 T raspberry syrup
  • 4 scoops vanilla ice-cream
  • 1 T chopped almonds
  • 4 mint leaves
  • 1 1/4 lb wild strawberries, blackberries, raspberries and red currant

Directions

Nougat Basket Caramel:
Boil sugar with water until it caramelizes. Add chopped almonds. Mix in butter, powdered sugar and lemon juice. Add flour and stir well. Cut the caramel into 4 bands (approx. 1 inch wide X 12 inches long). Shape it in a curve like a basket. Cut 4 smaller strips for the basket handle approx. 1/2 inch wide X 12 inches long. Assemble the basket. Bake at 375°.

Berries:
Mix all berries in a bowl and add raspberry syrup to it with lemon juice to taste.

How to serve:
Put raspberry syrup on the plate next to the nougat basket. Decorate with berries and a mint leaf. Add powdered sugar on top of the berries. Fill the basket with additional berries and a scoop of vanilla ice cream on top.

Serve immediately.
