Published many years ago in a cookbook by Antoinette Hatfield, wife of Senator Bob Hatfield
Ingredients
- 24 vanilla wafer cookies
 - 2 pkgs. cream cheese softened
 - 3/4 cup sugar
 - 2 eggs
 - 1 tsp. vanilla extract
 - 1 can cherry pie filling
 - whipped topping
 
Directions
Place one cookie each in the bottom of 24 paper-lined muffin cups.  In a mixing bowl beat cream cheese and sugar until smooth.  Add eggs and vanilla; beat well.  Divide filling into each muffin cup.  Bake in 375°F oven 20 minutes.
To serve, top each cheesecake with cherry or blueberry pie filling and a spoonful of whipped topping if desired.
