Mini Cherry Cheesecakes Recipe | |

Ingredients:
24 vanilla wafer cookies2 pkgs. cream cheese softened 3/4 cup sugar 2 eggs 1 tsp. vanilla extract 1 can cherry pie filling whipped topping
Directions:
Place one cookie each in the bottom of 24 paper-lined muffin cups. In a mixing bowl beat cream cheese and sugar until smooth. Add eggs and vanilla; beat well. Divide filling into each muffin cup. Bake in 375°F oven 20 minutes.To serve, top each cheesecake with cherry or blueberry pie filling and a spoonful of whipped topping if desired.
