Ingredients

  • 1 head broccoli, split
  • 1/2 head, cauliflower, sliced
  • 2 carrots, thin sliced lengthwise
  • 1 onion, sliced across
  • 1# 10 oz marinara sauce
  • 1# mozzarella, shredded
  • 1# ricotta
  • 3 eggs
  • 4 cl garlic, roasted
  • 9 lasagna noodles, cooked per package
  • 2 T parsley, minced
  • 1/4 C parmesan
  • salt / pepper

Directions

1. Grill vegetables until slightly charred and par cooked: chop

2. Mix Ricotta, parsley, parmesan, egg; season to taste

3. Mash garlic and mix into vegetables

4. Mix veggies and ricotta

5. Assembly:
a. about 1/4 C marinara in bottom of baking dish
b. 3 noodles lengthwise
c. spread 1/2 cheese/veggie mixture on noodles
d. 3 more noodles lengthwise
e. spread rest of veggie/cheese mixture
f. 3 more noodles
g. top with about 1-2 C marinara sauce
h. sprinkle on mozzarella

6. Bake uncovered 375-400 until 145-150 degrees internal
