Ingredients

  • 2 c. sugar
  • 2 c. plain flour
  • 2 sticks margarine
  • 1/2 c. cocoa
  • 1 c. boiling water
  • 1/2 c. buttermilk
  • 1 tsp. baking soda
  • 1 tsp. vanilla
  • Miniature marshmallows
  • 2 eggs, beaten

Directions

Mix sugar and flour in mixing bowl. Boil water, margarine and cocoa. Add liquid to sugar and flour. Add eggs, buttermilk, baking soda, and vanilla. Beat about 1 minute. Bake in greased 9x13 pan for 30 minutes at 350 degrees. While hot, cover with a layer of miniature marshmallows.

Icing:

1 stick margarine
4 tbsp. cocoa
6 tbsp. milk
1 box powdered sugar
1 tsp. vanilla
1/2 c. chopped pecans

Bring margarine, cocoa and milk to boil. Add powdered sugar, vanilla and nuts. Pour over marshmallows while cake is still warm.
