  • 1 cup all-purpose flour
  • 2 tablespoons vegetable oil
  • 2 potatoes (large, boiled)
  • 1 onion, chopped
  • 2 green chilies, crushed
  • 3 tablespoons oil
  • 1/2 teaspoon ginger, crushed
  • 1/2 teaspoon garlic, crushed
  • coriander seeds
  • 1 tablespoon cilantro, finely chopped
  • 1/2 lemon, juice of
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon allspice
  • 1/2 teaspoon red chili powder
  • salt

Directions

1. Mix together the flour, oil and salt.
2. Add little water till it becomes crumbly.
3. Keep adding water, kneading the mixture till it becomes a soft pliable dough.
4. Cover with a moist cloth and kee aside for 20 minutes.
5. Beat dough on work surface and knead again.
6. Re-cover.
7. Filling preparation------------------.
8. Heat 3 tbsp oil.
9. Add ginger, garlic, green chillies and few corriander seeds.
10. Stir fry for a minute, add onions and saute till light brown.
11. Add cilantro (fresh coriander), lemon, turmeric, red chilli, salt and garam masala (all-spice).
12. Stir fry for 2 minutes.
13. Add potatoes.
14. Stir for 2 more minutes.
15. Cool.
16. Keep aside.
17. Divide dough into 10 equal size pieces.
18. Use the rolling pin to roll a piece into a 5" oval.
19. Cut into 2 halves.
20. Run a moist finger along the diameter.
21. Join and press together to make a cone.
22. Place a tbsp.
23. of the filling in a cone.
24. Seal the third side using amoist finger.
25. Deep fry the samosas now of low-medium heat till light brown.
26. Serve with tomato sauce or any chutney you love.
