Ingredients

  • 4 russet potatoes (they don't turn brown as fast)
  • 1 or 2 onions
  • a handful of matzo meal (about 1/4 cup)
  • 2 eggs, or the whites from 3 eggs
  • Salt and pepper to taste
  • Oil for the pan

Directions

Grate the potatoes and onions into a bowl. Add the egg, salt and pepper, and stir well. Add enough matzo meal to absorb most of the liquid.

Heat the oven to 350F. Grease well a glass baking pan, and pour mixture into it. Bake for 45-60 minutes, until set, and edges are crispy.

Serve hot with applesauce.
