Ingredients

  • Yield: 8 servings
  • 2 pounds Fresh spinach, chopped
  • 3/4 cup Cream cheese
  • 2 cups Cottage cheese
  • 4 large Eggs, well beaten
  • 1 cup Matzo meal
  • 1 teaspoon Salt, or to taste
  • 1/4 teaspoon Nutmeg, or to taste
  • of black pepper
  • 1 1/2 tablespoons Fresh lemon juice
  • Paprika, for top

Directions

In heavy skillet, cook spinach quickly, with no added water, over medium heat, stirring until it just begins to wilt (about 4-5 minutes). Remove from heat, and cut in the cream cheese while the spinach is still hot. Mix well, until the cheese is melted and well distributed. Add all remaining ingredients, except 1/4 c of the matzo meal, and beat well. Spread into prepared pan, and sprinkle 1/4 c matzo meal over top. Dust with paprika. Bake covered, you can use foil, for 35 minutes, then uncover it and let bake 10 minutes more.
