SPINACH KUGEL III Recipe | |

Ingredients:
Yield: 8 servings2 pounds Fresh spinach, chopped 3/4 cup Cream cheese 2 cups Cottage cheese 4 large Eggs, well beaten 1 cup Matzo meal 1 teaspoon Salt, or to taste 1/4 teaspoon Nutmeg, or to taste of black pepper 1 1/2 tablespoons Fresh lemon juice Paprika, for top
Directions:
In heavy skillet, cook spinach quickly, with no added water, over medium heat, stirring until it just begins to wilt (about 4-5 minutes). Remove from heat, and cut in the cream cheese while the spinach is still hot. Mix well, until the cheese is melted and well distributed. Add all remaining ingredients, except 1/4 c of the matzo meal, and beat well. Spread into prepared pan, and sprinkle 1/4 c matzo meal over top. Dust with paprika. Bake covered, you can use foil, for 35 minutes, then uncover it and let bake 10 minutes more.From: Nancy Berry |
