Ingredients

  • 1 pound Italian sweet sausage
  • 8 or more mushrooms, sliced
  • 1/2 red onion, chopped
  • 12 eggs, beaten
  • 1/2 teaspoon each, salt, pepper and seasoned salt
  • 1 cup milk
  • 2 medium tomatoes, chopped
  • 8 ounces Mozzarella cheese, grated

Directions

Brown crumbled sausage; remove from skillet, and drain excess fat.
Saute onions and mushrooms in the skillet. Mix eggs and milk together with all other ingredients. Pour into a greased 9" X 13" pan.
Bake in 400 degree oven 30-40 minutes, or until knife comes out clean. Serves 6. Serve for breakfast or brunch. Goes well with salad or fresh fruit. Reheats well in foil.
