Ingredients

  • Pastry for 9 inch one-crust pie
  • 2/3 cup sugar
  • 1/3 cup butter, melted
  • 1 cup corn syrup
  • 2 tblsp. bourbon
  • 1/2 tsp. salt
  • 3 eggs
  • 1 cup pecan halves or broken pecans
  • 1 cup semisweet chocolate chips

Directions

Heat oven to 375 degrees. Prepare pastry. Beat sugar, butter, corn syrup, bourbon, salt, and eggs with hand beater. Stir in pecans and chocolate chips. Pour into pastry-lined pie plate. Bake until set, 40 to 50 minutes. Refrigerate until chilled, at least 2 hours. Immediately refrigerate any remaining pie.

Brandy Pecan Pie:
Decrease corn syrup to 3/4 cup. Substitute 1/4 cup brandy for the bourbon and omit chocolate chips.

Chocolate Pecan Pie:
Melt 2 squares (1 oz. each) unsweetened chocolate with the butter. Omit bourbon and chocolate chips.

Pecan Pie:
Omit bourbon and chocolate chips.
