Family favorite!!
Ingredients
- 2 carrots, diced
 - 2 celery stalks, diced
 - 1 small onion, chopped
 - 1/2 teaspoon salt (optional)
 - Pepper to taste
 - 2 cups cooked chicken, cut into bite sized pieces
 - 1 15-ounce can chicken broth
 - 1 cup fresh or frozen peas
 - dumpling dough
 
Directions
Simmer carrots, celery, and onion in a large pot with one quart water until nearly done.  Add remaining ingredients except dumplings and bring to a boil.  Adjust liquids, as needed, to make a nice soup.  Drop spoonfuls of dough into boiling soup and simmer, uncovered, for 8 minutes.  Cover and simmer 8 minutes more.  Split and lightly butter dumplings as you serve them.  Serves 6.
 
 Dumplings
 Mix 1 cup flour, 11/4 teaspoons baking powder, and 1/2 teaspoon salt.  Add 1 tablespoon oil and 1/2 cup milk.  Stir until moistened.  Drop by spoonfuls into gently boiling soup.  Cook as directed above.  Serve with butter.  Makes 6 medium dumplings.
