Chicken and Dumplings Recipe | |

Ingredients:
2 carrots, diced2 celery stalks, diced 1 small onion, chopped 1/2 teaspoon salt (optional) Pepper to taste 2 cups cooked chicken, cut into bite sized pieces 1 15-ounce can chicken broth 1 cup fresh or frozen peas dumpling dough
Directions:
Simmer carrots, celery, and onion in a large pot with one quart water until nearly done. Add remaining ingredients except dumplings and bring to a boil. Adjust liquids, as needed, to make a nice soup. Drop spoonfuls of dough into boiling soup and simmer, uncovered, for 8 minutes. Cover and simmer 8 minutes more. Split and lightly butter dumplings as you serve them. Serves 6.Dumplings Mix 1 cup flour, 11/4 teaspoons baking powder, and 1/2 teaspoon salt. Add 1 tablespoon oil and 1/2 cup milk. Stir until moistened. Drop by spoonfuls into gently boiling soup. Cook as directed above. Serve with butter. Makes 6 medium dumplings. Family favorite!!
