Ingredients
- 2 pounds yams(5-6 medium)
- 1 1/2 pounds cooking apples(McIntosh are good)
- 2/3 cup light brown sugar
- 6 tablespoons butter
- 1/2 cup apple cider (or apple juice)
- 3 tablespoons maple syrup
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1/2 teaspoon ginger
Directions
Cook potatoes in their skins @30 minutes
Peel and slice 1/4 inch thick
Peel, core and slice apples 1/4 inch thick
Alternate, and overlap yams and apples in a rectangular baking dish.
Sauce: In a small sauce pan add sugar, butter, cider, syrup, lemon juice, cinnamon and ginger. Simmer together ten minutes. Pour sauce over apples and yams and bake 25-30 minutes at 325 degrees.
This casserole can be made well ahead and reheated. Note: If using Winesaps or Cortland apples, increase cooking time by 10 to 20 minutes
