Ingredients

  • 2 cups sifted all-purpose flour -- sifted
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 3/4 cup milk
  • 3 tablespoons melted shortening or salad oil
  • 3/4 cup raw cranberries, chopped
  • 2 tablespoons grated orange rind
  • 2 tablespoons chopped nuts

Directions


Sift dry ingredients together into bowl. Measure remaining ingredients into a "hollow" in the dry ingredients. Stir only until all flour is moistened. Fill 12 greased muffin cups 2/3 full. Bake at 450 degrees F for 18 to 20 minutes. Makes 1 dozen muffins.

If using self-rising flour, omit the baking powder and salt.
