Ingredients

  • 8 oz chilled, fresh cooked lobster meat, cut into 1/2 inch pieces.
  • 2T minced celery
  • 1/2 t minced fresh tarragon leaves
  • 1/8 t salt
  • 1/8 t black pepper
  • 1 t lemon juice
  • 2 - 3 T mayo
  • 4 hot dog roll, lightly toasted
  • 1 t unslated butter, melted

Directions

mix lobster, celery, tarragon, salt, pepper and lemon juice. Fold in 2 T of mayo. Add more if dry. Brush sides of rolls with butter and toast. Fill with 1/3 cup salad. Serve immediately.
