• 3 squares bakers semi-sweet baking chocolate, chopped
  • 1/3 cup Splenda
  • 3 Tbls. Minute Tapioca
  • 3 cups skim milk
  • 1 egg, well beaten
  • 1 tsp. vanilla


Mix chocolate, sugar, tapioca, milk and egg in medium saucepan. Let stand 5 minutes.
Cook on medium heat, stirring constantly, until mixture comes to full boil. (Pudding thickens as it cools.) Remove from heat. Stir in vanilla.
Cool 20 minutes; stir.
Serve warm or chilled
note - if you aren't concerned with sugar you may sub regular sugar for splenda. If you do sub regular sugar use same amount as the splenda.
