Ingredients

  • 1 medium zucchini (about 8oz.)
  • salt
  • 1 egg - beaten
  • 1 TBLS. skim milk
  • = TBLS. flour
  • 1 clove garlic, minced

Directions

Rinse zucchini and dry. Grate zucchini. Toss with small amount of salt and place in a strainer. Drain for 30 minutes, pressing out liquid from time to time with a spatula.
Whisk egg and milk together. Add flour and mix thoroughly. Add garlic and zucchini.
Mix well and set aside.
Heat a large nonstick skillet over medium heat. Place a heaping TBLS. of zucchini
In pan and flatten to make a 3 round form. Repeat with remaining zucchini till Finished.
When first side is cooked, carefully turn each one over to cook other side.
Drain each pancake on a paper towel, serve immediately while still hot.
