This can be baked in a pie shell. Saute a little onion in butter and add to mixture.

  • 2 1/2 lbs. potatoes
  • salt
  • pepper
  • parmesan cheese
  • 3 eggs
  • 1 cup cream
  • chives, thyme & parsley
  • Peel, par-boil and thinly slice the potatoes. Line a loaf pan with greased foil and then layer the potatoes, seasoning each layer & sprinkling with a little grated cheese.
  • Beat the eggs with the cream & plenty of finely chopped herbs. Pour the cream mixture over the potatoes and grate more cheese on top. Bake at 375 degrees for an 1 to 1 1/2 hours. Turn out of the pan and slice.
