Ingredients:
Potato Pie (London Times Recipe) Category: Side Dish Preparation Level: moderate 2 1/2 lbs. potatoes salt pepper parmesan cheese 3 eggs 1 cup cream chives, thyme & parsley Peel, par-boil and thinly slice the potatoes. Line a loaf pan with greased foil and then layer the potatoes, seasoning each layer & sprinkling with a little grated cheese. Beat the eggs with the cream & plenty of finely chopped herbs. Pour the cream mixture over the potatoes and grate more cheese on top. Bake at 375 degrees for an 1 to 1 1/2 hours. Turn out of the pan and slice.
Directions:
...This can be baked in a pie shell. Saute a little onion in butter and add to mixture.
