This tart dressing is excellent for cooked pastas and vegetables, creating an instant salad out of almost anything. It's wonderful over tossed salads or slices of ripe home-grown tomatoes or drizzled over a submarine sandwich. In winter add a tablespoon of a dry herb called ""salad herbs"". In summer, add fresh herbs.
Ingredients
- 1 clove garlic, finely minced
- 1 tablespoon Dijon-style mustard
- 1 tablespoon honey
- 1/4 cup balsamic vinegar or red wine vinegar
- juice of 1/2 lemon
- 1/2 cup olive oil(preferably extra-virgin)
- 1 tablespoon dried salad herbs or fresh herbs of choice(optional)
Directions
In a jar with a tight-fitting lid, combine garlic, mustard, honey, vinegar, lemon juice and oil. Cover and shake well to combine. If desired, add herbs; mix well. Refrigerate until needed. Makes about 1 cup
