Ingredients
- CREAM OF TOMATO SOUP
- (Very Old Recipe)
- 2 c. milk
- 2 c. canned tomatoes
- 4 Tbsp. flour
- 4 Tbsp. butter
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/2 bay leaf
- 1 Tbsp. chopped onion
- 2 cloves
- Melt 2 tablespoons butter; add 2 tablespoons flour and 1
- teaspoon salt. Add milk gradually and cook until slightly
- thickened. Combine tomatoes, 1/2 teaspoon salt, pepper, bay
- leaf, onion and cloves. Simmer 10 minutes. Thicken with 2
- tablespoons butter and 2 tablespoons flour blended together.
- Strain and add white sauce (below).
- In top part of double boiler melt 3 tablespoons butter
- and add 4 tablespoons flour, 1/4 teaspoon salt, dash of pepper
- and 1 cup milk and cook 20 to 25 minutes.
