Ingredients

  • CREAM OF TOMATO SOUP
  • (Very Old Recipe)
  • 2 c. milk
  • 2 c. canned tomatoes
  • 4 Tbsp. flour
  • 4 Tbsp. butter
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/2 bay leaf
  • 1 Tbsp. chopped onion
  • 2 cloves
  • Melt 2 tablespoons butter; add 2 tablespoons flour and 1
  • teaspoon salt. Add milk gradually and cook until slightly
  • thickened. Combine tomatoes, 1/2 teaspoon salt, pepper, bay
  • leaf, onion and cloves. Simmer 10 minutes. Thicken with 2
  • tablespoons butter and 2 tablespoons flour blended together.
  • Strain and add white sauce (below).
  • In top part of double boiler melt 3 tablespoons butter
  • and add 4 tablespoons flour, 1/4 teaspoon salt, dash of pepper
  • and 1 cup milk and cook 20 to 25 minutes.
