My family has cooked squash this way for many years.

Ingredients

  • 3-6 yellow squash sliced
  • 1-2 eggs, beaten
  • 1/2 c. corn meal depending on amount cooked

Directions

Slice squash, put on plate
beat eggs in a separage bowl
pour corn meal on another plate.
First dip squash in egg, then in corn meal to cover both sides. Cook in hot oil until slightly brown on both sides. Sprinkle with salt to taste.


Three squash are usually enough for two peope.
