Moist and yummy.
Ingredients
- 3 cups flour
- 2 cups sugar
- 1 cup chopped pecans
- 1 tsp. baking soda
- 1 tsp. salt
- 1 tsp. cinnamon
- 3 eggs, beaten
- 2 cups mashed ripe bananas
- 11/2 cups vegetable oil
- 1 cup crushed pineapple, drained
- 2 tsp. vanilla
Directions
Preheat oven to 350. Mix flour, sugar, pecans, baking soda, salt and cinnamon together in a large bowl. Set aside. Combine eggs, bananas, oil, pineapple and vanilla in a medium bowl. Stir egg mixture into flour mixture by hand until flour is must moistened. Grease and flour a tube or bundt pan. Pour batter into pan. Bake 1 hour to 1 hour and 15 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes. Remove from pan and cool on rack.
