Ingredients

  • 2 pie crusts, your favorite
  • 2 Cups fresh ripe Georgia peaches
  • 1 Cup sugar
  • 2 Tablespoons water
  • 1/4 Cup all purpose flour
  • 1/4 Teaspoon cinnamon
  • 1/4 Teaspoon nutmeg
  • 1/8 Teaspoon allspice
  • 1/8 Teaspoon ginger
  • 2 Tablespoons butter, cut into 1/4 inch pieces

Directions

1. Preheat oven to 425 degrees. Fit one ready to bake pie crust to an oiled pie plate (pie plate that has been sprayed with vegetable spray) . Bake the crust for 5 minutes at 425. Remove from oven, allow to slightly cool

2. In a saucepan, combine Georgia peaches, sugar, water, all purpose flour, cinnamon, nutmeg allspice, and ginger. On a low heat, allow mixture to simmer for 10 minutes or until thickened.

3. Pour mixture into prepared crust about 3/4 full. Dot with butter pieces. Top with remaining pie crust and crimp edges to close.

4. Bake at 350 degrees for 30-40 minutes. Remove from oven and allow to cool slightly. Serve with vanilla ice cream or non-dairy whipped topping.
