Just had these last night... mmmmmm!

Ingredients

  • 1 pound red-skinned potatoes, cut into large cubes
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1/4 cup Parmesan cheese
  • 1 tablespoon Italian herb seasoning, or more to taste
  • pinch of salt
  • dash of freshly ground black pepper
  • 1/4 teaspoon cayenne pepper, optional

Directions

Preheat oven to 350-degrees. Place cut potatoes into a large mixing bowl. Add remaining ingredients and mix well, coating all potatoes. Spread out on a large baking sheet and bake in the oven for 30-45 minutes, until browned. Serve as is, or with ketchup.
