Roasted Red-Skinned Potatoes Recipe | |

Ingredients:
1 pound red-skinned potatoes, cut into large cubes2 tablespoons extra virgin olive oil 2 tablespoons balsamic vinegar 1/4 cup Parmesan cheese 1 tablespoon Italian herb seasoning, or more to taste pinch of salt dash of freshly ground black pepper 1/4 teaspoon cayenne pepper, optional
Directions:
Preheat oven to 350-degrees. Place cut potatoes into a large mixing bowl. Add remaining ingredients and mix well, coating all potatoes. Spread out on a large baking sheet and bake in the oven for 30-45 minutes, until browned. Serve as is, or with ketchup.Just had these last night... mmmmmm!
