Ingredients

  • 3 c. chicken breast, cooked and cubed
  • 1/2 c. corn oil
  • 1/4 c. fresh lemon juice
  • 1 1/2 tsp. garlic salt
  • 2 tsp. sugar
  • 1 tsp. prepared mustard
  • 1 tsp. dried rosemary , crushed
  • 1/2 Teaspoon Pepper
  • 1/2 c. fresh parsley, chopped
  • 1/2 c. green onions, thinly sliced
  • 8 Cups Raw Spinach Pieces (Chilled), washed and dried

Directions


Places chicken pieces in a bowl with a lid. In a jar with a lid, shake together oil, lemon juice, garlic salt, sugar, mustard, rosemary and pepper. Pour over chicken pieces. Mix gently. Cover with lid and refrigerate 1 to 4 hours. Just before serving combine with parsley, onions and spinach.
