Ingredients

  • 1 1/2 cups cooked chicken
  • 1 cup chopped onions
  • 1/2 cup canned mild green chili
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground oregano
  • 8 6-inch corn tortillas
  • vegetable oil, for frying (2 to 4 cups)
  • 1 1/2 cups sour cream
  • 1 1/2 cups guacamole
  • 1 1/2 cups Salsa Fresca
  • 1 cup grated Cheddar cheese

Directions

Cook onions in 2 Tbl. oil over medium heat till transparent. Add spices and chicken, cook 1-2 more minutes, set aside. Place oil in a deep fryer, or large heavy skillet, heat to medium high. Carefully dip each tortilla in hot oil for a few seconds each, just to soften them up, and drain them paper towels. Divide the chicken mixture between the tortillas, and roll them up, securing each one with a toothpick. Deep fry the flautas till golden brown on all sides, drain on paper towels. Serve the flautas with a dollop each of sour cream, Guacamole, and Salsa Fresca, and sprinkle with a little grated cheese. Serves 4.
