Ingredients

  • 6 medium purple potatoes
  • 1 bulb garlic
  • 1 tsp. salt
  • 3/4 c. olive oil
  • 1/4 c. lemon juice

Directions

Boil potatoes; meanwhile, pound garlic in a mortar with
salt until smooth. Peel cooked potatoes. Add them to the
garlic mixture one by one; continue to pound until well blended
and paste is smooth. Then add olive oil and lemon juice
alternating drop by drop. Continue stirring until mixture is
very smooth and you have a thick cream. Serve with warm
