Ingredients

  • 1/2 cup minced onion
  • 1 1/2 TBL butter
  • 1 1/2 TBL vegetable oil
  • 1/2 cup dry white wine
  • 4 ripe tomatoes, peeled, seeded & chopped
  • 1 small clove garlic, minced
  • 1/2 tsp salt
  • 1/5 tsp pepper
  • 3/4 tsp dried oregano
  • 5 oz Feta, crumbled
  • 1 lb large uncooked shrimp, shelled & deveined
  • Cooked spinach noodles
  • 1/2 cup chopped fresh parsley

Directions

In a heavy skillet, saute the onion in the butter & oil until soft. Add the wine, tomatoes, garlic, salt, pepper & oregano. Simmer until the sauce is slightly thickened. Stir in the Feta & simmer for 10-15 minutes longer. Just before serving, add the shrimp to the simmering sauce & cook 5 minutes or until the shrimp are just tender. Do not overcook. Serve over spinach noodles & garnish heavily w/parsley for color. Serves 4-6.
