Ingredients
- 1/2 cup minced onion
- 1 1/2 TBL butter
- 1 1/2 TBL vegetable oil
- 1/2 cup dry white wine
- 4 ripe tomatoes, peeled, seeded & chopped
- 1 small clove garlic, minced
- 1/2 tsp salt
- 1/5 tsp pepper
- 3/4 tsp dried oregano
- 5 oz Feta, crumbled
- 1 lb large uncooked shrimp, shelled & deveined
- Cooked spinach noodles
- 1/2 cup chopped fresh parsley
Directions
In a heavy skillet, saute the onion in the butter & oil until soft. Add the wine, tomatoes, garlic, salt, pepper & oregano. Simmer until the sauce is slightly thickened. Stir in the Feta & simmer for 10-15 minutes longer. Just before serving, add the shrimp to the simmering sauce & cook 5 minutes or until the shrimp are just tender. Do not overcook. Serve over spinach noodles & garnish heavily w/parsley for color. Serves 4-6.
