Shrimp with Feta Sauce Recipe | |

Ingredients:
1/2 cup minced onion 1 1/2 TBL butter 1 1/2 TBL vegetable oil 1/2 cup dry white wine 4 ripe tomatoes, peeled, seeded & chopped 1 small clove garlic, minced 1/2 tsp salt 1/5 tsp pepper 3/4 tsp dried oregano 5 oz Feta, crumbled 1 lb large uncooked shrimp, shelled & deveined Cooked spinach noodles 1/2 cup chopped fresh parsley
Directions:
In a heavy skillet, saute the onion in the butter & oil until soft. Add the wine, tomatoes, garlic, salt, pepper & oregano. Simmer until the sauce is slightly thickened. Stir in the Feta & simmer for 10-15 minutes longer. Just before serving, add the shrimp to the simmering sauce & cook 5 minutes or until the shrimp are just tender. Do not overcook. Serve over spinach noodles & garnish heavily w/parsley for color. Serves 4-6. |
